My First Meals

Today I received my first meal, from Michelle M. She made chicken enchiladas and was very good about customizing them for my picky family. (See the picture below) I will cook them tomorrow night for dinner. I am excited.

I also prepared my first meal. See the picture. I decided to make Hawaiian Haystacks. I put three large pieces of chicken in a bag and then in another bag I included the cream of chicken soup, seasonings, rice and all the toppings. I also included a liner for their crock pot and instructions. I will deliver them tomorrow and they can either freeze it for another day or cook it right away.

Getting Going

I know a few of the groups started the meal exchange this week. Maria was in charge of cooking dinner Monday night for those in her group. She said it was a little hard. When I spoke with Michelle P. she enjoyed receiving Maria's dinner. So I think your cooking night may be hard at first, but those nights you receive will be worth it.

My group is planning on meeting on March 17 to exchange frozen meals. Each of us will prepare 2 sets of frozen meals. So we will go home with 8 different frozen meals. I know Michelle M is doing enchiladas and bbq beef, I think I will do something with chicken. I will post recipes if they work out.
